Baking is soooo hard. I don't have the patience for measuring things carefully. As you might imagine, this makes for hit-or-miss baked goods. I also have a tendency to run out of things I need. Like, last night I made some banana bread. And I ran out of the regular olive oil I was using. So, I topped off the 1/4 cup of vegetable oil required with the extra virgin olive oil I had. The bread is fine, but it does have a hint of the strong extra virgin olive oil taste. It's still edible, but a bit curious.
The bread is also a bit on the dry side. I probably should've sifted the flour rather than just fluffed it with a spoon. And next time I'll use more banana. (I put in two bananas, having planned on three, but the third had turned completely black on the outside and was beginning to look scary with white patches of stuff, probably mold.)
Whatever. Banana bread is still yummy. :)
